Pancakes this morning! I didn’t have any blueberries–but would recommend adding them in the future–alone it was a little tasteless.

Blueberry Pancakes
The 30-Day Vegan Challenge, Colleen Patrick, Goudreau

  • 1 c. flour
  • 1 T. baking power
  • 1/4 t. salt
  • 1/4 t. cinnamon
  • 1 c. nondairy milk (I used coconut, but soy or rice might work better)
  • 2 T. canola oil
  • 3 T. sweetener (I used maple syrup, but apple or orange juice are other options)
  • 1/2 c. blueberries
  1. Combine the dry and liquid ingredients separately, then whisk together until just a little lumpy. Add in blueberries, if you have them.
  2. Heat a skillet to medium, spray with oil, and pour batter. Cook 2-3 minutes per side until it’s easily moved in the pan.
